 Lemon Garlic Roast Chicken:

Ingredients
  • 1 whole chicken, about 4 lbs.
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced
Instructions:
  1. Set the oven to 425 °F.
  2. Use cold water to thoroughly rinse the chicken, then pat it dry with paper towels.
  3. Mix the olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
  4. The chicken’s cavity and underneath the skin should also be covered with the mixture.
  5. Put the lemon slices inside the chicken’s cavity.
  6. A meat thermometer inserted into the thickest part of the thigh should read 165°F after roasting the chicken in the preheated oven for approximately 1 hour and 15 minutes.
  7. Before carving, take the chicken out of the oven and allow it to rest for 10 to 15 minutes.

Creamy Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
Instructions:
  • Chicken breasts should be salted and peppered.
  • In a big skillet over medium-high heat, warm the olive oil.
  • When the chicken is browned and cooked through, add it to the skillet and cook for about 5 minutes on each side.
  • Chicken should be taken out of the skillet and put aside.
  • When fragrant, add the minced garlic to the skillet and cook for about a minute.
  • Add the chicken broth and stir to remove any browned bits from the skillet’s bottom.
  • When the cheese is melted and the sauce is smooth, add the heavy cream and Parmesan cheese.
  • Add the sauce on top of the chicken before adding it back to the skillet.
  • Turn down the heat to low and let the sauce and chicken simmer for about 5 minutes.
  • Before serving, add freshly chopped parsley as a garnish.

BBQ Chicken Skewers

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • Wooden skewers, soaked in water for 30 minutes
Instructions:
  • Add salt and pepper to the chicken cubes for seasoning.
  • Combine the BBQ sauce, honey, apple cider vinegar, and olive oil in a small bowl.
  • Chicken cubes are threaded onto the soaked wooden skewers.
  • The BBQ sauce mixture should be brushed onto the chicken skewers.
  • Set the temperature of your grill or grill pan to medium-high.
  • Turning every few minutes, grill the chicken skewers for 10 to 12 minutes, or until the chicken is thoroughly cooked and lightly charred.
  • Before serving, take the chicken skewers off the grill and brush them with any leftover BBQ sauce mixture.
