Rasgulla
One of the most well-known and well-loved Bengali sweet dishes is rasgulla. It is made of chenna, or cottage cheese, which is boiled in sugar syrup until it absorbs the sweetness, and is soft and spongy. The first step in making rasgulla is to make chenna from fresh milk. When the chenna is prepared, divide it into small balls and knead it until it is smooth. These balls should be cooked in a sugar syrup for 10 to 12 minutes, or until they are spongy and have doubled in size.
Sandesh
Another well-known chenna-based Bengali treat is called sangesh. But unlike rasgulla, sandesh is a dense, solid dessert that is flavoured with things like rose water, saffron or cardamom. As you would for rasgulla, begin by preparing chenna to make sandesh. Then, combine the chenna with the sugar, cardamom powder, and saffron strands. Stirring continuously, the mixture should be cooked for 10 to 12 minutes on a low flame. Take the mixture off the heat and allow it to cool once it has thickened and separated from the pan’s sides. Make small balls out of the mixture or give it any other shape you like by kneading it until it is smooth. The adaptable dessert Sandesh can be eaten on its own or used to create other delicious desserts.
Mishti Doi
Mishti doi, or sweet yoghurt, is a delectable dessert that is a staple of Bengali cuisine. It gets its tangy and sweet flavour from fermenting sweetened milk all night. You must first boil milk and then add sugar to it to make mishti doi. Add a few spoonfuls of curd or yoghurt after letting the milk cool. Pour the mixture into tiny earthen pots after thoroughly mixing. To allow the milk to solidify into yoghurt, leave the pots covered with a lid or cling film at room temperature for 8 to 10 hours. Before serving, chill the yoghurt for a few hours after it has set. Mishti doi is a straightforward dessert that is delicious.
