Ingredients:

  • Kosher Sea Salt
  • 400 g dried ramen noodles
  • 1 tablespoon canola oil
  • 5 chopped green onions
  • 2 garlic cloves, roughly chopped
  • 1/2 teaspoon crushed red pepper flakes, plus additional for serving
  • 2 handfuls of baby spinach, minced
  • one 3-centimeter piece of ginger
  • 3 to 5 tablespoons soy sauce,
  • 1 lime divided and juiced,
  • 3 tablespoons butter
  • 1 large handful roasted enoki mushrooms
  • white and black sesame seeds

DIRECTIONS

Step 1: Bring a medium saucepan of salted water to a boil over high heat. Cook the noodles in the broth. Set aside 12 cup of the cooking water. Drain the remainder and arrange the noodles on a plate.

Step 2: Melt butter in a skillet over medium heat. Combine the onions, garlic, ginger, red pepper flakes, and oil in a mixing bowl. Cook for one minute. Until it melts, whisk the butter. Season with salt to taste.

Step 3: Add two tablespoons of soy sauce and lime juice to the spinach in a blender. Blend until smooth, then add the reserved water to make a saucy sauce. If necessary, season with more soy sauce.

Step 4: Return the pan to medium heat and add the mushrooms. Cook for about two minutes or until soft and golden. Cook until one tablespoon of soy sauce is completely absorbed.

Step 5: Return the noodles to the pan and top with the sauce. Toss to coat the noodles completely and, if necessary, add a little more of the reserved water. Serve with mushrooms, sesame seeds, and red pepper flakes to taste.
