Valentine’s Week is now underway in 2023, the year of the Chocolate Day holiday. Every day of the week has a special meaning, from Rose Day to Valentine’s Day. Valentine’s Week festivities begin on February 9 and include Chocolate Day, which falls on that day every year. On this day, people give and receive chocolates as a sign of their love, appreciation, and friendship for their loved ones, family, and friends. This event is a wonderful justification for indulging in some decadent and delicious chocolates  treats.

There is a chocolate recipe for every taste and cooking level, ranging from traditional chocolate cake and fudgy brownies to more inventive dishes like chocolates  fondue and truffles. So why not make some decadent and mouthwatering chocolatestreats to enjoy with your loved ones on Chocolate Day.

1. Dark Chocolate Truffle

Ingredients:

200g Dark Chocolate (54%)

120g Heavy Cream

10ml Rum

For dusting, use 5g of butter cocoa powder.

Method:

1) Begin by melted the bittersweet chocolates.

2) Carefully heat the cream without letting it boil.

3) Finally, combine the two by adding the three portions of cream.

4) After the ganache has cooled, combine it with the butter and rum, then spread it out on a parchment-lined baking sheet.

5) After the ganache has hardened, roll out 20 grammes of it by hand.

6) Place the truffles in the refrigerator for a half-hour.

7) After they have dried, remove them, sprinkle with cocoa powder, and serve right away.

2. Dark Chocolate Loaf

Ingredients:

120g Dark chocolates (Callebaut 54%)

185g Flour

5g Baking powder

2g Baking soda

1g Salt

200g Unsalted butter

225g Brown sugar

5ml Vanilla essence

2 Eggs, lightly beaten

5g Roughly chopped walnuts

20g Dark chocolates callets (flattened chocolate chips – Callebaut 54%)

Method:

1) Prepare a 9′ loaf pan and preheat the oven to 180 degrees C.

2) Melt the 120 g of dark chocolate in a microwave-safe bowl, then remove and leave to cool.

3) Combine the salt, baking soda, baking powder, and flour in a sieve. Place aside.

4) In a big bowl, combine the butter and brown sugar and beat until they are light and fluffy. Remix after adding the vanilla essence.

5) Gradually incorporate the melted chocolate into the butter-brown sugar mixture. Well-blended eggs should be added next.

6) Add and combine the dry ingredients (flour, baking powder, baking soda, and salt).

7) Combine the dark choco chips and chopped walnuts.

8) Pour into the loaf pan and prepare for baking in the hot oven.for about 25 to 30 minutes. The cake has to be dense and moist so a toothpick ideally should not come out clean when inserted into the cake.

9) Serve warm, plain or with vanilla bean ice cream!

3. Dark chocolate covered strawberries

Ingredients:

6 ounces dark chocolate

6 ounces white chocolate

18 medium-sized strawberries, room temperature

Method:

1) Place the broken pieces of dark chocolates in a glass bowl. Then, melt it while whisking it over a saucepan of boiling water or in short bursts in the microwave.

2) Carry out the same procedure twice with the white chocolate to create two bowls of silky, melted chocolates.

3) Place a sheet of baking paper between 2 plates. Half of the strawberries are dipped in the dark chocolate before being placed on one of the plates to harden. Put the other half of the strawberries on the other plate after dipping them in the white chocolate.

4) Drizzle the white chocolate over the chocolates once it starts to harden using a spoon or a bottle with a narrow nozzle.

5) Carry out this procedure once more, drizzling the remaining dark chocolate over the white chocolate strawberries.

6) After the strawberries have had time to set, about 15 minutes, serve. Any leftovers should be placed in an airtight container and kept in the refrigerator. Before serving, rewarm them to room temperature.

4. Spiced Hot Chocolate

Ingredients:

250 ml of milk (Vegan or Non-Vegan)

2 tablespoons Cocoa Powder

1 ½ tablespoon of Jaggery or Sugar

1 teaspoon cinnamon

½ teaspoon chili powder

5 cloves

2 pieces of star anise

1 teaspoon black pepper

¼ teaspoon ground nutmeg

Method:

1) Start by warming the milk in a pan. Add the cloves, black pepper, star anise, nutmeg, and cinnamon. It should boil.

2) Next, turn down the heat and stir in two tablespoons of cocoa powder and 1.5 tablespoons of jaggery. Stir continuously until both have fully dissolved in the milk.

3) Turn off the stovetop. Pour the hot chocolate mixture into your favourite mug while straining all the spices. To add even more heat, garnish it with a dash of ground nutmeg, chilli powder, and black pepper. Enjoy!

5. Chocolate and almond rum ball

Ingredients:

chocolates sponge eggless 250 gm

Dark chocolate (55% -70%) 100 gm

Single cream(20-25%fat) 150 ml

Almonds 100 gm

Castor sugar 100 gm

Instant coffee powder 10 gm

Dark rum 15 ml

Method:

1) Bring cream to a boil in a pan, then turn off the heat. Add the chocolate and set aside to slightly cool before thoroughly combining.

2) Bake the almonds for 8 to 10 minutes at 180 degrees Celsius. Chop the almonds roughly.

3) Place the nougat on a sheet of parchment paper after heating the castor sugar in a pan and caramelising it. Use a rolling pin to crush the nougat until it is slightly coarse.

4) In a mixing bowl, mash the chocolate sponge until it resembles breadcrumbs. Then, add half the chocolate ganache, the rum, and the instant coffee powder dissolved in a teaspoon of water. Mix the ingredients with your hands until the consistency is uniform.

5) Now incorporate 2/3 of the crushed almond.
